Ryan Matlack spent 15 years teaching in public schools before he decided to chase his childhood dream of opening his own restaurant. Matlack graduated from Oklahoma State University in 1996, and taught high school English in South Carolina, Texas, and his native Oklahoma before his wife Amber encouraged him to pursue his restaurant dream.

“We’d moved back home to Ardmore, and Amber said, ‘If you don’t chase the dream now, I don’t want to hear about it when you’re 50.’”

It was all the motivation he needed to start work on Ten-Star Pizza Kitchen, a thoroughly modern and gourmet take on an American favorite. Matlack credits another pizza joint with inspiring his place: Pizza Getti, an East Dallas tradition since 1968.

“I wouldn’t be in business if it wasn’t for Bob Rotenberry,” Matlack said. “I first tasted Pizza Getti in the late ‘90s, and it was the best pizza I ever had. Bob was kind enough to give me some of his recipes, and I’ve tweaked them enough to make them mine.”

In addition to help with recipes and inspiration, Matlack got help on the restaurant’s decor from his wife, who is a University of Oklahoma alum with a degree in design. She put her degree to work creating a comfortable, warm, and modern interior for Ten-Star.

The Matlacks opened Ten-Star Pizza Kitchen in October 2010. As they approach their third anniversary, Ryan said the restaurant is doing well and developing a strong clientele.

“The only pizza in Ardmore when we opened was fast food pizza,” he said. “People weren’t used to spending $24 on a large pizza, but when they realized that pizza will feed eight people, they came around.”

Not only does the pizza go a long way, it is delicious, as are all the items on the menu. The menu is divided into appetizers, salads, panini, and pizza. For the pizza, the crust and sauce are made fresh daily, and the pizza ovens are designed to crisp the crust, adding a wonderful texture to all the pies.

Ryan Matlack’s mother oversees the kitchen, including doing a great deal of the cooking, making Ten-Star a true family endeavor. The attention to detail and love of food shows in all the menu items.

Mozzarella Wrapped Prosciutto is served on a bed of greens with a drizzle of balsamic, and it’s a wonderfully creamy, spicy start to a meal, but it’s also presented beautifully. The Matacks care about all the details. Ryan worked his way through OSU in the restaurant business, so he brings a great deal of experience and knowhow to Ten-Star.

Diners can build their own pizzas or order The Bob—an all meat indulgence—or the Don, which is all veggie. The truly adventurous can opt for The Jimmy, a combination of all the meats and all the veggies.

There are four panini to choose from, including The Ten Star Chicken Pesto, a pressed sandwich made with grilled chicken, provolone, basil pesto, and chipotle mayo. The blend of flavors and textures is outstanding.

Ten-Star Pizza Kitchen also features organic frozen yogurt for dessert, a nice selection of beer and wine, as well as a small selection of spirits for diners who request a cocktail.
